Fall fun always includes apple picking in our family but what to do with all of those apples?  My personal favorite recipe is Easy Apple Cake by Greta Greisman found in the Kinnereth Cook Book that my Grandmother handed down to me.

Now don’t let the name fool you – this cake isn’t as easy to make as they say BUT once you have tasted it you will realize it was worth every moment!

INGREDIENTS:

4 cups of sliced apples (make sure to slice them very thin)

3 tablespoons of cinnamon

5 tablespoons of sugar

3 cups of all purpose flour

2 cups of sugar

3 teaspoons of baking powder

1 teaspoon of salt

1 cup of oil

4 eggs

¼ cup of orange juice

1 tablespoon of vanilla

Preheat the oven to 375. Grease a 10″ tube pan.  Mix together the first THREE ingredients and set aside for approx 20 minutes.  This lets the apples absorb the sugar and cinnamon.  Sift flour, sugar, baking powder and salt into a bowl.  Make a well.  Drop in oil and eggs, orange juice and vanilla.  Beat with spatula or wooden spoon until smooth and shiny.  (this part can get tricky if you don’t measure the ingredients just perfect) I prefer to use a wooden spoon as the mixture can get thick very fast. Pour 1/3 of the batter into the greased tube pan.  Then add HALF of the apples, drained of excess moisture, and repeat, ending with last third of the batter. (make sure to leave enough batter to cover all the top apples, you don’t want any apples sticking out of the edges. I find using a butter knife to spread the batter works best. This part is finicky especially the first couple of times you make it.)

Bake for 60-75 minutes or until done.  If cake starts to get too brown cover top lightly with tinfoil.

The cake should be a beautiful golden brown when done!
