Okay, I can’t prove that my title is politically correct or even true, but with the mosquitos out pestering our evenings, it is the perfect excuse to get my children to eat more bananas and it works. Mosquitos are annoying, blood sucking little things and I personally blow up like a balloon where-ever they bite me. Since bananas are not something I enjoy the texture of when they go rip, bananas don’t get ate in my home once they are past that delicious still slightly green stage. This quickly had us on the hunt for many banana recipes so we could find that perfect banana recipe.
Of course, on our travelling to finding the perfect recipe, we couldn’t find one so we had to fuss and mess with our own ideas on making something oh so yummy. With mosquito season upon us, we are forever having to bake banana items and I am a-okay with that as they are always so delicious… that is if you are a banana baked good person like myself.
So, ready for a delicious, drool worthy recipe?! Okay great!
Sour Cream Banana Bread Recipe
Ingredients
- 1/2 cup margarine or 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed banana
- 1/2 cup chopped nuts (omit if you don’t like nuts)
- 1/2 cup sour cream
Directions
- Grease 1 large loaf pan. Or two smaller.
- Cream margarine, sugar, eggs and vanilla.
- Add dry ingredients, then bananas, nuts and sour cream.
- Mix well.
- Bake at 350 F for 1 – 1.5 hour(s).
This banana bread recipe can make a very large banana bread. I have a big bread pan to make large loaves so it works out perfectly for me. If you are using an average size banana pan, you may need too. The cooking time will vary with each stove. Over at Annette’s house it bakes in approximately 1 hour in her gas stove, but at Christine’s it takes about an hour and a half in her electronic conventional oven.

strange things I never knew. we avoid bananas in the summer because they attract black flies…gotta give it a try to see if it works the other way for mosquitos.
one of my kids was allergic to black fly bites, so his pediatrician said to stop him eating bananas while they were out and about. it worked. he’s grown now though and out of the house.
