My kids love when I make homemade tacos, so do I but I don’t really love all the work that is put into making them ( Yes I make my tacos very different from most). So when I stumbled across a recipe for Taco Cornbread Casserole I knew all I had to do was modify a few things and I could make it taste as good as when I make tacos ( without the crunchy shell though) Here’s what your going to need!!

I box Jiffy Cornbread Mix

1 egg ( for cornbread mix)

1 Cup Milk (for Cornbread mix)

1lb to 1 1/2lb lean ground beef

1 large onion chopped well

1 1/2 cup Sour Cream

2 cups shredded Cheddar cheese

Chopped tomatoes ( as many as desired)

Shredded lettuce ( as desired)

Preheat your oven to 350 and combine necessary ingredients for cornbread mix. Lightly grease and 10 inch pan ( or at least thats what I used) and spread mix evenly throughout the pan and bake for 15 min. Take out to cool and set aside.

Add chopped onion in a frying pan and let them cook until they ” sweat” ( Meaning they are starting to get soft and the flavor starts to seep out) when they do add lean ground beef and a dash of garlic powder if you like ( I do)

Cook until meat is nice and brown, then drain the grease.

Combine sour cream and 1 cup of cheese and mix well

Place cooked ground beef on top of cornbread, then spread sour cream and cheese mixture on top ( as well as possible) Place back in the oven and bake for 20 min.

Remove pan from the oven and let cool for 15 min, then top with shredded lettuce, chopped tomato and remainder of Cheese!! Serve and Enjoy!!! This dish is super easy and totally delicious!!

This looks SO good! I think I’ll just have to make it and try it for my Mexican-Food Loving family sometime soon!

Our family loves playing games together.

Our go to games are- Sorry, Connect 4, Yahtzee, Trouble.

We love playing card games too.

We doesnT do game night yet because my son is 3yo but soon we will start with some preschool game.

we don’t have a game night but sometimes we trade bedtime stories for a game. right now the fav is dinosuar train and my DD4 is a little cheater. she’ll go to other room to roll and come back saying oh look i got the number i wanted, but i’m on to her.

We also love Settlers of Catan! We taught our oldest (10 years old) and she’s getting pretty good at it now! The younger ones (9 & 7) love playing Hotels & Rat a Tat Cat. It’s always such great family time, would love to win this game, thanks!

Well, my daughter is only 17m at the moment so we don’t play boardgames right now however, we do enjoy a game of family tag or hide and seek :)

We’re hoping to play a lot of games with her (Candyland being my hubby’s favourite). Hubby and I usually play games together when my daughter is sleeping and boy do we love word games like Boggle and Scrabble!

Our kids are somewhat young, but we do play games and puzzles..I am not sure its an actual game night, but I would like to start this as they get older!

We have done game night in the past and the older two love Monopoly!

We don’t have a dedicated night for games, but we do play them often. This may change as the children get older though!

We don’t have a game night but someone here will usually sit down and play a game with dd when she asks! She is only 4 right now and her favorites are Candyland, Chutes & Ladders and Rudolph the Red Nosed Reindeer.

We do have a family game night! It’s a great gathering with the whole family and everyone loves it! We normally play monopoly, card games, Rich Dad Poor Dad etc.
