Before I begin, I have to first tell you that I HATE marshmallows.Â I don’t know why.Â There’s just something so revolting about the overly saccharine, sticky treat that is a favourite for kids and adults alike.Â Just thinking of marshmallows make my teeth hurt. I cannot eat anything that contains marshmallows. I hate marshmallows. Hate them!
What do my lovely parents do? Little One went shopping with them and came home with a big bag of those multi-coloured mini marshmallows! Ahhhhhh!
I’m sort of okay with her getting treats from her grandparents now.Â I realize it’s a battle I’m never going to win.Â Little One adores her grandparents and gets to eat junk food when she’s at their house.Â Fine.Â She knows when she’s at home, she gets none of that. I’m okay with that now.
Anyway, what to do with a giant bag of mini marshmallows?!? I don’t eat them.Â Little One certainly isn’t going to eat an entire bag of that stuff.Â I did what any Mom would do.Â I Googled “mini marshmallow recipes”!Â I found some pretty neat ones and let Little One choose which one she wanted to do.Â We decided to make Stained Glass Windows.
STAINED GLASS WINDOWS
- 1/2 cup unsalted butter (1 stick)
- 12 oz best quality dark chocolate, finely chopped
- 1 tsp. vanilla extract
- 10.5 oz multi-coloured mini marshmallows
- Combine chocolate and butter in a large microwavable bowl. Microwave for 45 sec. Stir, and microwave again in 20 sec. intervals until smooth and fully melted.Â Add vanilla.
- Let chocolate cool for a few minutes (but not hardened). Stir in marshmallows. Make sure marshmallows are completely coated with chocolate.
- On a piece of waxed paper, spoon mixture into shape of a log. Roll up sides and twist ends to seal. Refrigerate for at least 2 hrs.
- Cut into 1/3 inch slices and serve. To keep, cover stained glass treats and keep in fridge.
We don’t eat much junk food and I don’t normally give my 3 year old stuff like this, but it is a treat, and I desperately needed to find something to do with all those marshmallows!!!
Our finished product didn’t turn out as pretty as the photo that accompanied the original recipe. I chalk that up to having an impatient 3 year old who couldn’t wait the 2 hrs of chilling time!
